Quick Pickled Cucumber and Carrot Slaw

- large English cucumber, thinly sliced into coins or matchsticks1
- large carrot, peeled and julienned1
- scallions, thinly sliced on a bias2
- fresh cilantro leaves, roughly chopped1/4 cup
- unseasoned rice vinegar1/3 cup
- warm water2 tbsp
- granulated sugar2 tbsp
- kosher salt1/2 tsp
- toasted sesame oil1 tsp
- crushed red pepper flakes1/2 tsp
Instructions

In a medium bowl, whisk together the rice vinegar, warm water, granulated sugar, and kosher salt until the sugar and salt have completely dissolved. Whisk in the toasted sesame oil and crushed red pepper flakes.

Add the sliced cucumbers, julienned carrots, and sliced scallions to the bowl. Toss thoroughly to ensure all the vegetables are coated in the brine.

Let the mixture sit at room temperature for 5 to 10 minutes to lightly pickle while staying crisp.

Fold in the chopped cilantro just before serving, and use tongs or a slotted spoon to lift the slaw out of the brine when assembling sandwiches.
