Crispy Carnitas

Carnitas from classic pulled pork

  • cooked neutral pulled pork1 1/2 lbs
  • lard, neutral oil, or bacon drippings1 tbsp
  • ground cumin1/2 tsp
  • dried Mexican oregano1/2 tsp
  • garlic powder1/4 tsp
  • fresh orange juice2 tbsp
  • fresh lime juice1 tbsp
  • of kosher salt Pinch

Instructions

Position an oven rack 4 to 6 inches below the broiler element and preheat the broiler to high.

Spread the shredded pulled pork in a single, even layer across a large, rimmed baking sheet.

Evenly drizzle the melted lard or oil, orange juice, and lime juice over the meat, then sprinkle with the cumin, Mexican oregano, garlic powder, and a light pinch of salt. Toss gently directly on the pan to coat, then spread it flat again.

Broil for 4 to 6 minutes, watching closely, until the top edges of the pork become deeply browned, caramelized, and crispy while the underneath remains juicy and tender.

Remove from the oven, toss the crispy bits with the tender base meat, and serve immediately in warm tortillas with diced onions, cilantro, and salsa.
