Classic Pulled Pork Thai Flavored

  • Thai red curry paste3 tbsp
  • garlic, minced3 cloves
  • fresh ginger, finely grated1 tbsp
  • can (13.5 oz) full-fat coconut milk1
  • soy sauce or tamari2 tbsp
  • fish sauce1 1/2 tbsp
  • brown sugar or palm sugar2 tbsp
  • creamy peanut butter1 tbsp
  • fresh lime juice2 tbsp
  • to 2 lbs cooked shredded pulled pork1 1/2
  • Neutral oil1 Tbsp

Instructions

Heat the neutral oil in a large skillet or wide saucepan over medium heat. Add the red curry paste, minced garlic, and grated ginger, sautéing for 1 to 2 minutes until fragrant and deepened in color.

​Pour in the coconut milk, soy sauce, fish sauce, brown sugar, and peanut butter. Whisk well to break up the curry paste and peanut butter, then bring the mixture to a gentle simmer for 3 to 4 minutes until slightly reduced and glossy.

​Add the shredded cooked pulled pork directly into the simmering sauce. Stir thoroughly to coat, reduce the heat to medium-low, and let the pork warm through for 4 to 5 minutes so it absorbs the flavors.

​Remove the skillet from heat and stir in the fresh lime juice before serving.
