Scale Recipe
- Thai red curry paste3 tbsp
- garlic, minced3 cloves
- fresh ginger, finely grated1 tbsp
- can (13.5 oz) full-fat coconut milk1
- soy sauce or tamari2 tbsp
- fish sauce1 1/2 tbsp
- brown sugar or palm sugar2 tbsp
- creamy peanut butter1 tbsp
- fresh lime juice2 tbsp
- to 2 lbs cooked shredded pulled pork1 1/2
- Neutral oil1 Tbsp
Instructions
1
Heat the neutral oil in a large skillet or wide saucepan over medium heat. Add the red curry paste, minced garlic, and grated ginger, sautéing for 1 to 2 minutes until fragrant and deepened in color.
2
Pour in the coconut milk, soy sauce, fish sauce, brown sugar, and peanut butter. Whisk well to break up the curry paste and peanut butter, then bring the mixture to a gentle simmer for 3 to 4 minutes until slightly reduced and glossy.
3
Add the shredded cooked pulled pork directly into the simmering sauce. Stir thoroughly to coat, reduce the heat to medium-low, and let the pork warm through for 4 to 5 minutes so it absorbs the flavors.
4
Remove the skillet from heat and stir in the fresh lime juice before serving.
